Fish sauce is a sauce that adds a salty taste to Vietnamese meals. It is made from anchovy, salt and water and fermented through various stages for six months to a year before being taken from large barrels. Fish sauce production equipment is a large wooden barrel, which is made of Bo Loi wood in Phu Quoc forest, each barrel with a height of 2m to 4m, a diameter of 1.5m to 3m. Processing each barrel takes about 4 to 5 million, the use time can be up to 60 years.

Raw production materials of fish sauce from salt and anchovy. Anchovy has many types such as Soc Tieu, Com Do and Com Than anchovy for the quality of fish sauce, while other anchovies are slightly poor quality. Salt must be low in impurities and salt should be stored for more than 3 months. When used to salted fish, the salt deposited below will be discarded.

After mixing the fish and salt according to a ratio of 1: 3, then put into the barrel for 12 months to 15 months depending on processing of each person.  By Phu Quoc’s own method, they get the sauce of different levels of protein and mix them together to get each protein level. Phu Quoc fish sauce is not colored like other fish sauce, Phu Quoc fish sauce made entirely from fresh fish for 12 months so the fish sauce is naturally yellow.
